Today’s recipe comes from our Health Advocate and Holistic Nutritionist, Emily Dawson.
This salad is perfect for summer.
It combines berries that are an amazing source of antioxidants with iron-rich spinach.
If you want to make this salad a little heartier, feel free to add quinoa or sweet potato.
Here is our new recipe for a spinach salad with fresh berries and maple balsamic vinaigrette!
1 large box of spinach
1 box microgreens
2 cups strawberries, hulled and sliced
1 cup blueberries
½ English cucumber, sliced and quartered
¼ cup almonds
¼ cup pecans
½ red onion, thinly sliced
1 avocado, sliced (for serving)
½ cup olive or avocado oil
3 tbsp balsamic vinegar
3 tbsp maple syrup
1 tbsp grainy Dijon mustard
1 clove garlic, pressed
Salt and pepper, to taste
Add spinach, microgreens, blueberries, strawberries, red onion, chopped nuts, and cucumber to a large salad bowl and lightly toss.
Make your dressing - add balsamic, olive oil, Dijon, garlic, salt and pepper to a mason jar or small bowl and whisk to combine.
Drizzle your salad with vinaigrette and toss. Top with fresh avocado. Serve and enjoy!
